Google definitely still uses the domain name against the search word, but why would you not want to use a domain name that people are likely to think of anyways?

If we have acquired some popular relevant domains should I just redirect them to our main URL in order to gain some more PR and links or should I make a content rich page for these domains with links to our main URL?

Don't forget that google does consider the domain name when ranking a site. This is a highly contentious claim, but if you do a simple search on a keyphrase, say "Simply Paris", google will actually highlight "simply paris" in the domain name of the results as an occurence of the search term. Also, other sites linking to a site such as www.simply-paris.com will use the domain name in their link, which further boosts its importance.
